Dual Quad-Core Xeon Mac Pro Core 2 Quad or build?

I can edit a photo a lot, and sometimes also edit videos. I need a computer that can perform these tasks as quickly as possible without falling … I have my eye on the Mac Pro (Dual Quad-Core Xeon 2.8) .. is quiet expensive to consider go Raid Hard Drive 10K RPM or more … and I use a Mac for 14 years … ¿I can run bootcamp this option to run Windows XP? You can also build Core 2 Quad / extreme for much less than RAID included.
